[THE BEST] OVEN ROASTED SWEET POTATOES

Hey there!

Confession .. I was the biggest skeptic on sweet potatoes growing up.  It wasn't until after I had my oldest & he had started eating table food that I even tried them!  I have to say, it was love at first taste!  I love all things sweet potato now.  I even love sweet potato casserole, but do NOT put the marshmallows on top. I don't know what it is, but I just can't do it!

Just last year, I discovered that there are different ways you can make them.  Not just the traditional sweet potato or sweet potato fries.  Side note, have you ever had sweet potato fries dipped in caramel!?!  Holy cow.  It's amazing.  Don't knock it til you try it!  

Okay, like I was saying, last year, I diced a sweet potato for the first time & roasted it.  I don't think I'll ever eat a sweet potato any other way now!  My mother-in-love doesn't even like sweet potatoes, but LOVES the roasted ones I make.  Honestly, they taste like dessert & I'm never mad about it.

WHAT YOU NEED:

3 Large sweet potatoes or a bag of them (I personally like the bag due to the fact that those are usually smaller potatoes & are easier to dice!)
1 Stick of salted butter
1/2 Cup of brown sugar 

That's it!

WHAT TO DO:

Preheat oven to 400℉
Line baking sheet with tinfoil
Peel & dice sweet potatoes (place in a drainer after diced)
Rinse potatoes
Place potatoes on lined baking sheet & spread evenly
Melt the stick of butter in microwave safe dish
Once melted, mix in brown sugar
Pour mixture over sweet potatoes

*Depending on how many potatoes I make, I add more butter & brown sugar.  I make sure all potatoes have the mixture on them ... psssst, more makes them even better!

Bake for 35-40 minutes or until potatoes are soft.  I typically toss them around after about 30 minutes & then finish cooking them.

I'm telling you, you'll fall in love! We won't ever have Thanksgiving again without them! 
It's such an easy recipe (aside from the dicing part because sweet potatoes are super hard to cut through) & SO good!
